I love your blog and your recipes. Do you know of a trick for making a fish dish, like sea bass, look like it came from the sea? I had a friend who did this, she put small chunks of myrtle in the bottom of the dish. It is really interesting, I will have to try this with my friends. I am new to your site and love it. A while ago I read a nice post on how to cure the inside of a chicken using beer. Any ideas on what to do to my turkey? I know some people do it the other way around and some do it with beer, but I don't really know what to do and google isn't helping! Thanks! Hi Kristy, so glad you are enjoying the site. You might try the beer method on a whole turkey. I've never used it on a turkey, but you might be able to use it on parts of a turkey that you like to keep and the rest is pretty much the same. The beer should penetrate the skin of the turkey. Also, I have found that using the oven for a few hours or more really does help to penetrate the skin. Hope this helps!
